Finishing you bread off with a glaze.

Try finishing off with:

  • Brush with water or milk adds a shine
  • Olive oil add flavour as well as a glossy finish.
  • butter adds colour and flavour while keepinthe dough soft - best applied after baking
  • Salted water (2tsp with 2tbsp of water) then brushed over gives a crisp shiny crust.
  • Egg wash gives a golden shiny crust.

Toppings

  • Dust with flour or semolina brush with water or milk before dusting.
  • Seeds - Sunflower seeds, pumpkin seeds, sesame seeds, poppy seeds or linseeds gently press into dough before baking.
  • Grated cheese - sprinkle on before baking.
  • Fresh herbs - rosemary, thyme, sage, basil work well with an oil glaze.
  • Flakes - wheat, oats, barley - sprinkle over loaf before baking - adds fibre and texture to bread.
  • Icing sugar - dust sweet breads after baking.
  • Black pepper - freshly ground is best and can be added before or after baking.
  • Sea Salt - sprinkle over or an attractive, crunchy topping. Apply before baking.
